Enzymatic oligomerization of natural antioxidants can enhance their potential application as nutraceuticals

On Friday 1 April, Abel Muñiz-Mouro has defended his Doctoral Thesis entitled “Enzymatic technology for the production of high added value oligomers from natural antioxidants”, supervised by Dr. Gemma Eibes and Dr. Beatriz Gullón.

The main objective of this PhD thesis is to better understand the factors affecting the enzyme-catalyzed oxidative oligomerization of natural antioxidants in absence of toxic organic solvents, leading to the design of proper biocompatible technologies that enhance the economic and environmental viability of the process through enzyme reuse.

The commission was formed by Prof. Francisco José Plou Gasca (Institute of Catalysis and Petrochemistry), Prof. Carmen López Díaz (Universidad Politécnica de Madrid) and Prof. Lucília María Alves Ribeiro Domíngues (Universidade do Minho).
